Mushrooms are one of nature's more magical gift to us. With many curative properties, they are a boon to our health and our taste buds alike. Many, like the nutty tasting porcini, are very difficult to cultivate; they spring to life in hardwood forests to form a symbiotic relationship with plant roots, giving them access to water and benefiting from their nutrients.
And they add delicious taste to our meals. Combine this goodness with soft and crumbly Gorgonzola cheese, one of Italy's most extravagant cheeses, and you've got a winning pizza that will melt in your mouth.
What you need:
Porcini Mushrooms (or any other preferred mushroom)
About 50 grams of Gorgonzola cheese
What you do:
Cut the mushrooms into very thin strips and spread them on the pizza, not packing the mushrooms too high to avoid sogginess. Alternatively, you can brown the mushrooms in a little olive oil prior to placing them on the pizza. Grate or crumble the Gorgonzola over the top and place into the oven for 3 — 5 minutes. Take out and enjoy your sumptuous treat!
