PIZZA FROM THE ISLE OF SARDINIA

An autonomous region within the boot country, Sardinians speak 4 languages in addition to Italian — and they are famous for their pecorino cheese, made from the milk of their own local sheep.

The sharp tasting salty cheese is still made using the original recipe outlined in Pliny the Elder's tomes and is extremely popular with pasta dishes and on its own to finish a meal. We've paired it with one of nature's favorite vegetables for a truly delectable pizza.

What you need:

  • About 80 grams of pecorino cheese
  • Black pepper
  • Cauliflower

What you do:

Blanche the cauliflower in boiling salt water for about 10 minutes and cut into small, bitesized florets. Spread the florets liberally on the pizza, then sprinkle black pepper and pecorino cheese over the pizza before slipping in the oven. Yes, we know. Amazing.
