ANTIPASTI PIZZA

Here's a pizza that mixes the succulent flavor of the beloved oven-kissed vegetables of the Italian kitchen with the enticingly fresh taste of pizza. While "antipasti" actually means before the meal, this recipe brings these delicious roasted vegetables, perfectly prepared, right onto the top of the main dish.

It feels right that in this busy world, instead of giving up on the delicious foods we love, we join them together in a more perfect way, unifying a number of Italian delicacies into one amazing treat.

What you need:

  • Zucchini batons*
  • Eggplant or any vegetable you would prefer or like to add (peppers, sweet potato, cauliflower, broccoli are all possible!)
  • About 50 grams of smoked mozzarella cheese

What you do:

In advance, prepare the vegetables by cutting them into strips or rounds, drizzling with olive oil, salt, pepper and garlic and baking in your regular oven at 180 degrees for about 1 hour. Place the baked antipasti onto the defrosted pizza and grate mozzarella over the top of the pizza. Take it out of the oven in about 4 minutes and yes, you can lick your fingers when you h FROM ITALY ave finished. It is that good.
