PIZZA BAKING TIPS

Preparing pizza for baking
Preparing pizza for baking
  • Defrost pizza at room temperature for about an hour before placing it in the oven. Or leave it to thaw in the refrigerator overnight.
  • Try not to stack more than two pizzas while defrosting; the product weight will reduce air bubbles in the crust, and the baked pizza won't be as airy and fluffy.
  • Defrosted pizza should be kept refrigerated. The pizza can be used up to 72 hours from the time it was defrosted.
  • Do not refreeze pizza that has been defrosted.
Adding Toppings (optional)
Adding Toppings (optional)
  • For the best results use the following quantity of toppings:
    • 9" pizza toppings should be 2.8 oz / 80 gm or under
    • 12" pizza toppings should be 4.9 oz / 140 gm or under
  • Avoid using watery vegetables as your toppings.
  • Strain off any liquid in the topping before adding it to the pizza.
  • Spread the toppings evenly throughout the pizza. Avoid placing all the toppings in the middle of the pizza.
  • You should place fresh herbs like basil or arugula on the hot pizza that just came out of the oven, but not in the oven, as herbs burn easily.
  • Popular toppings: pepperoni, sausage, ham, mushroom, onions, olives, green or red pepper, tomato, fresh basil, arugula, pineapple, or extra cheese.
    Baking the pizza
    Baking the pizza
    • Bake only Donna Italia pizzas in Donna Italia ovens.
    • Ensure the temperature of the oven is around 650F (340C) before baking pizza.
    • Bake time is 3 minutes/180 seconds. However, if you have added toppings to the pizza, it may need another half a minute of baking time.
    • Each chamber fits one 12" or two 9" pizzas at once.
    • When baking two 9" pizzas at once, place the pizzas diagonally.
    • Place the pizza directly on the stone. Do not put cardboard, plastic, foil, or paper inside the oven. It can catch fire.
    • Do not let toppings or oil fall onto the baking surface. The stone will absorb any liquid that touches it.
    • Avoid opening the oven door while baking; it will reduce the temperature of the oven.
